The processing and nutritional quality of plant products depend in part on the assembly of the various components within the harvested plant organs. In this context, we are more specifically interested in the structure and assembly of the cuticular bases of fruits (including cereal caryopses). Our aim is to characterise the main cellular, molecular and physicochemical mechanisms involved in the formation of these different plant supramolecular edifices in order to identify new markers that closely link varietal selection and food or non-food processing technology.
