Actual position and research subject

Current position: Research Director in the ISD team
Research theme: The aim of Marc Anton's research is to understand the role of biopolymer assemblies at different size scales in the construction, stabilisation and deconstruction mechanisms of dispersed systems. He is particularly interested in the emulsifying, foaming and gelling properties of natural assemblies (proteins and lipoproteins) to structure food matrices and protect and release nutrients in the simulated gastrointestinal tract in vitro. After focusing his research on the functional properties of egg yolk lipoproteins, he has now refocused his efforts on the functionalities of the assemblies of new protein sources (plant proteins, algae, etc.) intended for human consumption, in a context of food transitions and the redefinition of the food supply between now and 2050.

At the same time, he is involved in leading large groups (teams, units): Director of the Assemblages d'Interactions Biopolymères Unit (2012-2022) comprising 200 people. He is also Chairman of the Groupe Français Protéine et Nutrition, and Director of the GIS Systèmes Agroalimentaires de la Région Pays de la Loire. He is responsible for a number of international and national collaborative projects, and is regularly called upon as an expert and/or advisor to public authorities (Europe, ministries, local authorities), academics (including educational institutions) and economic partners.
He is the author of 125 peer-reviewed international articles, 8 opinion papers, 3 books, 24 book chapters, 20 keynote lectures and 5 patents.
