Actual position and research subject

Current position: Research associate in the Polyphenols, Reactivity & Processing team
Research theme:

My scientific expertise pertains to the reactivity of plant specialized metabolites towards oxygen and their resulting interactions with proteins. In food processing, the oxidation of polyphenols through both enzymatic and chemical actions triggers protein bonding that impairs the physicochemical properties of the final product. The transdisciplinary nature of my work has allowed me to develop skills in multiple areas: (i) analytical chemistry, involving high-throughput analysis of specialized metabolites using liquid chromatography coupled with mass spectrometry, (ii) fluorescence and UV-Visible spectroscopy, (iii) multivariate statistical analysis, and (iv) oxygen status monitoring.
