Research theme:

I study the reactivity of phenolic compounds using real matrices, such as apple pomace, as well as model solutions. My work revolves around two axes:

  1. Firstly, assessment of the antioxidant capacities of mixed polyphenols and analysis of their interactions (synergy, additivity, antagonism) using the DPPH, FRAP and ORAC antioxidant activity tests;
  2. On the other hand, the study of their capacity to consume oxygen by quantifying the impact of the latter on the disappearance of native polyphenols and the appearance of oxidation products, using LC-UV-MS analysis.

By linking oxygen consumption to the antioxidant potential of polyphenols, I'm contributing to a better understanding of the mechanisms governing their antioxidant activity in relation to their level of oxidation.

This research is part of the BIOPOP (BIOlogical POwer of Plant) project, which aims to valorize polyphenols from plant co-products to develop natural culinary solutions with organoleptic, antioxidant and antimicrobial properties for meat products and marinades.
