Senior Researcher and lead of the Polyphenols, Reactivity & Processing team

Research theme:

With a university background in the chemistry and biochemistry of natural molecules, my scientific expertise today lies in the field of analytical chemistry and the reactivity of plant phenolic compounds in food matrices.

I explore the polyphenolic biodiversity found in food resources and the mechanisms that govern polyphenol oxidation by elucidating their structural modifications during processing.

I am also interested in the consequences of these structural changes on the functional properties of oxidized polyphenols: interaction properties with proteins and polysaccharides (tanning properties), coloring properties or antioxidant capacity.

Apples and their processing in cider is one of my main areas of research, but current projects also involve other plant matrices such as rapeseed, faba bean, date or yam...
