Screening for starch degradability

Medium throughput methods coupled with multivariate analysis can be used to identify starch products with the desired degradation properties.

The diagram shows our approach to studying the relationship between the structure of native or processed starch (on the left of the figure) and its degradability (on the right of the figure).

On the left, the structure of a starch is a hierarchical association of structural elements, in increasing levels of organisation, from the molecular scale to the granule and possibly modified by a process (such as extrusion).

On the right, the starch degradation kinetics resulting from a screening of a population of starches, using a medium-flow technique. The starch structure-degradation relationship is described as a combination of several factors using appropriate data analysis techniques.
