A new family of assemblies studied by the NANO team

Understanding the hemicellulose-polyphenol system: a new approach to developing bio-based materials .

In this research conducted as part of the ANR SUSHYMAT project, we systematically explored the xyloglucan-tannic acid pair as a model hemicellulose-polyphenol system. Three types of assemblies with specific colloidal properties were obtained by varying the mixing conditions, thereby highlighting the important role of water and steric interactions in the structuring of the complexes.
