The PRP team wins an award at the ITA'innov 2017 competition

The ‘Des cidres & des couleurs’ project, in which the PRP team took part, won in the ‘research & methodology’ category of the ITA'innov competition organised by ACTA. The project led to the identification and discovery of new phenolic compounds responsible for the different colours of ciders and a better understanding of the mechanisms involved in pigment formation and stability.

This project was led by the IFPC with the BIA unit (PRP team) as part of the Nova2cidre UMT, the University of Rennes and ESA, in partnership with the Brittany and Pays de Loire regions and UNICID.

During the course of the project, juice and cider production methods were developed and various tools were designed for companies to help them manage the colour of their products, avoiding the use of colouring agents and optimising inputs. A varietal selection process has been launched and a variety of interest for rosé ciders has already been identified and protected. Finally, consumer studies have enabled us to gain a better understanding of how ciders are perceived in terms of colour, and to identify different typologies.
